Instructions
1-Line a 16cm by 26cm shallow rectangular baking pan with baking paper, leaving a 2 cm overhang for easy removal.
2-Soften the 2 litres of reduced fat vanilla ice-cream slightly so it’s easier to work with, while crushing 125 grams of raspberries with 1 tablespoon of sifted icing sugar into a rough puree.
3-Swirl the raspberry puree through the softened ice-cream to create a marbled effect that maintains great texture.
4-Press this mixture into the prepared pan and smooth the top evenly.
5-Cover the pan and freeze for 4-5 hours or overnight to ensure proper setting and ease of slicing.
6-Prepare ingredients by washing fruits and measuring everything out.
7-Line the baking pan as described and add the ice-cream mixture.
8-Freeze until firm, which takes about 4-5 hours for the best results.
9-Transfer to a chilled tray when ready, then top with sliced peaches, nectarines, raspberries, passionfruit pulp, and grated dark chocolate.
10-Serve immediately to enjoy the fresh, vibrant flavors at their peak.
