Ingredients

Scale

2 cups all-purpose flour

1/4 cup sugar

1 tablespoon plus 1 teaspoon baking powder

2 tablespoons cocoa powder

1/2 teaspoon salt

1 3/4 cups buttermilk

1/3 cup melted and cooled butter

2 eggs

2 teaspoons vanilla extract

1/2 teaspoon vinegar

2 tablespoons red food coloring (or red beet powder as a natural alternative)

4 ounces cream cheese, softened to room temperature

4 tablespoons butter, softened to room temperature

1 1/2 cups confectioners sugar

1 teaspoon vanilla extract

1/2 cup milk

Buttermilk Tenderness and tang

Cocoa Powder Chocolate flavor and color base

Red Food Coloring/Beet Powder Vivid red hue

Instructions

1-Make the Cream Cheese Glaze: Whip 4 ounces softened cream cheese and 4 tablespoons softened butter until smooth. Gradually mix in 1 1/2 cups confectioners sugar, 1 teaspoon vanilla extract, and 1/2 cup milk until creamy. Set aside.

2-Preheat Waffle Iron: Heat to medium-high and spray with cooking spray. Gather ingredients for smooth sailing.

3-Mix Dry Ingredients: In a large bowl, whisk 2 cups flour, 1/4 cup sugar, 1 tablespoon plus 1 teaspoon baking powder, 2 tablespoons cocoa powder, and 1/2 teaspoon salt.

4-Combine Wet Ingredients: In another bowl, beat 1 3/4 cups buttermilk, 1/3 cup melted cooled butter, 2 eggs, 2 teaspoons vanilla, 1/2 teaspoon vinegar, and 2 tablespoons red food coloring until smooth.

5-Make Batter: Pour wet into dry, stir gently until just combined. Lumps are okay for fluffiness!

6-Cook Waffles: Pour about 1 cup batter per waffle. Cook 3 minutes until crisp and deep red. Keep warm in a low oven.

7-Serve: Drizzle with glaze, top with chopped pecans. Enjoy warm!
