Ingredients

– 2 cups fresh blueberries [provides natural sweetness and antioxidants]

– 4 tablespoons fresh lemon juice (divided) [adds brightness and acidity to balance flavors]

Instructions

1-Preheat the oven to 400 degrees F. Place 2 cups fresh blueberries on a large baking sheet. Pour 2 tablespoons of fresh lemon juice over the blueberries and drizzle with 1 tablespoon honey. Gently toss to combine.

2-Roast the blueberries for 7-10 minutes, or until they are soft and nearly bursting, then remove from the oven and let cool to room temperature.

3-In a small bowl, mix 1 cup ricotta cheese with the remaining 2 tablespoons fresh lemon juice and the zest of 1 large lemon.

4-Spread the ricotta mixture evenly on the toasted slices of 1 French baguette.
