– 1 medium fennel bulb with green top trimmed and reserved

– 1 medium onion cut into wedges

– 1 large chicken cut up or about 8 chicken thighs totaling approximately 2 and three-quarters pounds

– 4 clementines unpeeled and sliced into about one-quarter inch crosswise pieces

Instructions

1-First Step: Preheat your oven to 425ยฐF and prepare the marinade by combining all the liquids, herbs, and seasonings in the roasting pan.

2-Second Step: Add the fennel, onion, chicken, and clementine slices, tossing to coat evenly before covering and chilling.

3-Third Step: After marinating, place the pan in the oven and roast until the clementines brown and chicken is fully cooked.

4-Fourth Step: Optionally, reduce the pan sauce on the stove for extra flavor and garnish with chopped flat-leaf parsley.
