Ingredients
4 medium potatoes (about 2 lbs / 900 g)
3 medium carrots (about 10 oz / 300 g)
1 tablespoon salt
ยฝ tablespoon white vinegar
4 hard-boiled eggs
7 oz (200 g) summer sausage (can be substituted with bologna or smoked sausage)
4 oz (100 g) dill pickles
1 can (15 oz) sweet peas, drained
1 teaspoon dill paste or fresh dill
4–5 green onions (can substitute with regular yellow onion or shallots)
1 cup mayonnaise
Salt and pepper to taste
Instructions
1-Cut potatoes and carrots into small uniform cubes.
2-Place them in a large pot, fill with water, add salt and vinegar, then bring to a boil over medium-high heat.
3-Reduce heat to medium and cook about 15 minutes until potatoes are cooked through. Drain and cool to room temperature.
4-Meanwhile, cut sausage, pickles, and green onions into small cubes. Chop dill if using fresh.
5-Cut hard-boiled eggs into small cubes.
6-In a large bowl, combine potatoes, carrots, sausage, pickles, peas, green onions, and dill.
7-Add mayonnaise and mix until well combined.
8-Season with salt and pepper.
9-Cover with plastic wrap and refrigerate for at least 1 hour before serving.
