2 tablespoons olive oil

ΒΌ teaspoon smoked paprika

ΒΌ teaspoon garlic powder

1 lb spicy sausage (or substitute with classic sage breakfast sausage, chicken sausage, plant-based sausage, cooked bacon, or ham)

1 cup white cheddar cheese, shredded

6 low-carb burrito tortillas

8 eggs

1 cup low-fat small curd cottage cheese

ΒΌ teaspoon garlic powder for eggs mixture

ΒΌ teaspoon smoked paprika for eggs mixture

1 avocado (optional for serving)

Pico de gallo (optional for serving)

Instructions

1-Preheat oven to 400Β°F.

2-Toss diced potatoes with olive oil, salt, smoked paprika, and garlic powder. Spread evenly on a quarter sheet tray or 9Γ—13 dish. Add uncooked sausage in small chunks across the pan. Bake for 30 minutes until potatoes are tender and sausage is cooked.

3-Blend eggs, cottage cheese, garlic powder, and smoked paprika until smooth. Pour egg mixture over the potatoes and sausage, then sprinkle shredded white cheddar on top. Bake for another 10 minutes until eggs are set.

4-Remove from oven and slice the cooked mixture into 6 even rectangles. Wrap each piece in a burrito tortilla, optionally adding avocado. Serve with pico de gallo if desired.
