1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon fine salt, divided
Β½ teaspoon black pepper
4 bone-in or boneless pork chops, about ΒΎ to 1 inch thick, totaling 1Β½ to 2 pounds
2 tablespoons avocado oil or olive oil
1 sweet yellow onion, thinly sliced
2 cups chicken broth, divided (preferably low-sodium or gluten-free if needed)
3 tablespoons all-purpose flour (or gluten-free flour substitute)
1 teaspoon ground sage
mashed potatoes (optional for serving)
fresh thyme (optional for serving)
chopped fresh parsley (optional for serving)
Instructions
1-Mix garlic powder, onion powder, half the salt, and black pepper. Season pork chops on both sides with this mixture.
2-Heat 1 tablespoon oil in a heavy skillet over medium-high heat. Brown pork chops for 3-4 minutes per side. Remove and keep warm.
3-Add remaining oil to the skillet and deglaze with ΒΌ cup broth, scraping up browned bits.
4-SautΓ© sliced onions in the skillet until browned and tender, about 8-10 minutes.
5-Sprinkle flour over onions and stir until no white flour remains and onions thicken.
6-Add remaining 1ΒΎ cups broth, stir to lift browned bits, then add sage and remaining salt. Simmer to thicken for about 1 minute.
7-Nestle pork chops into the gravy, spoon onions over them, and cook until internal temperature reaches 145Β°F (about 2-6 minutes).
8-Garnish with fresh thyme or parsley. Serve with mashed potatoes and spoon gravy over if desired.
