Ingredients
1 cup whole milk, warmed to about 110ยฐF (43ยฐC)
2 and 1/4 teaspoons instant yeast
2 tablespoons granulated sugar, divided
1 large egg
1/4 cup unsalted butter, room temperature and cut into 4 pieces
1 teaspoon salt
3 cups all-purpose or bread flour
2 tablespoons melted unsalted butter mixed with 1 tablespoon honey for optional topping
Instructions
1-Whisk warm milk, yeast, and 1 tablespoon sugar together and let sit for 5 minutes. It should bubble up.
2-Add the remaining sugar, egg, butter, salt, and 1 cup of flour; mix on low speed for 30 seconds, scrape the bowl, then add the remaining flour and mix on medium speed for about 2 minutes until the dough forms and pulls away from the bowl.
3-Knead the dough for 5 minutes by mixer or hand on a lightly floured surface until it passes the windowpane test (dough stretches thin without tearing). Keep it slightly sticky.
4-Place the dough in a greased bowl, cover, and let it rise in a warm spot for 1-2 hours until doubled in size.
5-Grease baking pans. Ceramic or glass works best for even browning.
6-Punch down the dough, divide it into 14-16 pieces, shape into smooth balls, and arrange in the pans.
7-Cover and let the rolls rise until puffy, about 1 hour.
8-Preheat the oven to 350ยฐF (175ยฐC) and place rack in the lower position. This prevents top burning.
9-Bake the rolls for 20-25 minutes until golden brown, rotating pans halfway through baking; cover with foil if the rolls brown too fast.
10-Brush warm rolls with the optional honey butter topping, if desired, and let cool slightly before serving.
11-Store leftovers tightly covered at room temperature for 2-3 days or refrigerate for up to 1 week.
