– 1 tablespoon fresh parsley chopped for freshness

Instructions

1-Prepare the vegetables: Begin by gathering all ingredients and chopping the vegetables. Dice the onion, mince the garlic, chop the tomatoes, and slice the carrot and celery if using. This preparation step helps streamline the cooking process.

2-Sauté the aromatics: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, and other vegetables (like sliced carrot and chopped celery if using). Sauté until softened, about 5 minutes, releasing their flavors.

3-Add tomatoes and broth: Add the chopped tomatoes to the pot and cook for another 2-3 minutes. Then pour in the 1 liter of broth, stirring everything together. Bring the mixture to a boil.

4-Cook the pasta: Once the broth is boiling, add the 200 grams of pasta letters. Reduce heat to maintain a gentle simmer. Cook until the pasta is tender, typically 8-10 minutes. Be careful not to overcook the pasta to prevent it from becoming mushy.

5-Season and serve: Season with salt and pepper to taste, adjusting according to your preference. Remove from heat and serve hot. For vegan adaptations, ensure appropriate ingredient substitutions have been made. Garnish with fresh herbs if desired.
