Ingredients
– 2 Β½ cups all-purpose flour for creating a flaky base
– 1 tablespoon powdered sugar
– Β½ teaspoon coarse kosher salt
– 16 tablespoons (1 cup) cold unsalted butter cubed for creating a flaky base
– β cup whole milk
– 1 pound strawberries (hulled and sliced) for providing sweet, fruity center
– Β½ cup granulated sugar for providing sweet, fruity center
– pinch of coarse kosher salt
– 2 teaspoons cornstarch
– 2 teaspoons fresh lemon juice
– 1 cup powdered sugar for adding a sweet, shiny finish
– 2 tablespoons milk for adding a sweet, shiny finish
– ΒΌ teaspoon vanilla extract
– sprinkles (optional)
Instructions
1-Step 1: Make the Dough Combine the flour, powdered sugar, and salt in a food processor and pulse to mix. Add the cold cubed butter and pulse until the mixture looks like coarse crumbs. Pour in the milk and process until a dough forms, then shape it into a rectangle, wrap it, and refrigerate for at least 2 hours.
2-Step 2: Prepare the Filling Cook the strawberries with sugar and salt until they bubble, then simmer briefly before pureeing. Mix the cornstarch and lemon juice, whisk it into the puree, and heat until thickened. Let the filling chill in the fridge to make it easier to handle.
3-Step 3: Assemble and Bake Roll out the chilled dough to about 1/8 inch thickness and cut it into rectangles. Brush the edges with egg wash, add a layer of filling on half of the rectangles, then top with the remaining dough. Seal the edges with a fork, trim any excess, and refrigerate the filled pop tarts before baking at 375Β°F (190Β°C) for about 25 minutes until lightly golden.
4-Step 4: Add the Glaze Once cooled, mix the glaze ingredients and spread it over the pop tarts. If you like, add sprinkles for extra fun. This whole process, including prep and baking, takes about 25 minutes for preparation and 35 minutes for baking, with chilling time in between, yielding 8 to 9 pop tarts.
