๐Ÿ“ Strawberry Scones offer a delightful combination of fresh berries and a tender, flaky texture, perfect for breakfast or afternoon tea.
๐Ÿฅ This easy-to-make recipe yields golden, flavorful scones with a sweet glaze that complements the natural freshness of strawberries.

  • Total Time: 30 minutes
  • Yield: 12 scones

Ingredients

– 2 cups all-purpose flour

– 3 tablespoons sugar

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1/2 cup (8 tablespoons or 1 stick) unsalted butter (chilled and diced)

– 1 cup chopped fresh strawberries

– 1 large egg

– 1/2 cup heavy whipping cream (chilled)

– 1 tablespoon milk for brushing the top

– 1/2 tablespoon coarse sugar for sprinkling

– 2/3 cup powdered sugar

– 1 tablespoon milk

Instructions

1-Preheat and Prep: Heat your oven to 400ยฐF. Line a baking sheet with parchment paper. Get all ingredients measured and chilled.

2-Mix Dry Ingredients: Sift 2 cups all-purpose flour, 3 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt into a large bowl.

3-Cut in Butter: Add the 1/2 cup chilled diced butter. Use a pastry blender to cut it in until it looks like coarse crumbs. This step is key for flaky texture.

4-Add Strawberries: Gently toss in 1 cup chopped fresh strawberries. Make a well in the center.

5-Combine Wet Ingredients: In another bowl, beat 1 large egg with 1/2 cup chilled heavy whipping cream. Pour into the well.

6-Mix Dough: Stir gently just until moistened. Do not overmix to keep scones tender.

7-Shape and Cut: Turn dough onto floured parchment paper. Pat into a 3/4-inch thick circle. Cut into 12 wedges and separate them at least 1/2 inch apart on the sheet.

8-Brush and Sprinkle: Brush tops with 1 tablespoon milk and sprinkle 1/2 tablespoon coarse sugar.

9-Bake: Bake 15 to 16 minutes until golden. Cool slightly.

10-Make Glaze: Mix 2/3 cup powdered sugar with 1 tablespoon milk. Adjust for drizzling consistency. Drizzle over cooled scones.
