Ingredients

– 1-2 tablespoons olive oil for halved potatoes

Instructions

1-Preheat the oven to 425ยฐF (220ยฐC). For whole sweet potatoes, poke holes with a fork and place them directly on a parchment or foil-lined rimmed baking sheet.

2-Roast for 40 to 50 minutes until the skin puffs and the potatoes are tender when pierced with a fork. Do not wrap in foil to keep the skin crispy.

3-For faster cooking, halve sweet potatoes lengthwise, brush cut sides with 1-2 tablespoons olive oil, season with salt and pepper, and place cut-side up on the baking sheet.

4-Roast for about 30 minutes until browned and tender. Serve with desired toppings or stuff with fillings and sauces to create a complete meal.
