Ingredients

– 2 pound package of frozen tater tots

– 1 pound lean ground beef

– 1.5 ounce taco seasoning packet

– 2 cups shredded cheddar cheese

– 8 ounces sour cream

– 4 ounces sliced black olives

– 1 pint grape tomatoes, cut in half

– 3 scallions, sliced (green and white parts)

Instructions

1-Prepare the Tater Tots: Preheat the oven to 425 degrees Fahrenheit. Spread tater tots in a single layer on a baking sheet and bake for 20-25 minutes until crispy.

2-Cook the Beef: While tots bake, brown ground beef in a skillet over medium-high heat until no longer pink. Add taco seasoning and 3/4 cup water, bring to a boil, then reduce heat and simmer for 5 minutes.

3-Combine and Melt: Once tots are done, turn broiler to low and transfer tots to a 9ร—13 inch baking dish. Top with seasoned beef, sprinkle shredded cheese evenly over beef, then broil until cheese melts (about 1-2 minutes).

4-Add Fresh Toppings: Remove from oven and top with sour cream, sliced olives, tomatoes, and scallions. Serve immediately.
