10 oz cherry tomatoes, halved

8 oz fresh mozzarella pearls

1 cup chopped spinach

1/4 cup chopped fresh basil

1/2 cup olive oil

2 tablespoons balsamic vinegar

3 to 4 cloves garlic, minced

3/4 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

balsamic glaze for drizzling

Instructions

1-First, start by cooking the tortellini. Bring a large pot of salted water to a boil and add the 20 oz of cheese tortellini, cooking it according to the package until it’s al dente that usually takes about 5 minutes. Once done, drain it and rinse with cold water to cool it down quickly. This step keeps the pasta firm and ready for mixing.

2-Next, in a big bowl, toss together the cooked tortellini with the 10 oz of halved cherry tomatoes, 8 oz of fresh mozzarella pearls, 1 cup of chopped spinach, 1/4 cup of chopped fresh basil, and 3 to 4 cloves of minced garlic. It’s like creating a colorful masterpiece! Then, drizzle in the 1/2 cup of olive oil, 2 tablespoons of balsamic vinegar, 3/4 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. 3-After that, pop the bowl in the fridge to chill until you’re ready to serve about 10 to 15 minutes does the trick. Before digging in, stir it up again and add a bit more olive oil if it looks dry.
