Ingredients

– 1 1/2 cups uncooked long grain white rice

– 2 cups low sodium chicken or vegetable stock

– 1 1/2 tablespoons light soy sauce

– 1 tablespoon Chinese cooking wine

– 2 garlic cloves, minced

– 2 cups frozen diced vegetables (carrots, peas, corn mix)

– 1/4 teaspoon white pepper

– 1 1/4 cups (180g) uncooked bacon or ham, chopped

– 1 tablespoon sesame oil for finishing

– 1/2 cup finely sliced green onion (about 2 3 stems) for finishing

Instructions

1-Preheat oven to 200ยฐC (390ยฐF) or 180ยฐC for fan ovens.

2-In a baking dish approximately 22 x 32 cm (9 x 13 inches), combine uncooked rice, stock, soy sauce, cooking wine, garlic, frozen diced vegetables, and white pepper. Stir and spread evenly.

3-Scatter raw, chopped bacon evenly over the mixture.

4-Cover with foil and bake for 40 minutes.

5-Remove foil and bake uncovered an additional 15 minutes to brown the bacon.

6-Remove from oven, cover loosely with foil, and let rest for 10 minutes to finish cooking and absorb moisture.

7-Stir in sesame oil and green onions, fluff with a fork, and serve.
