Instructions

1-First, place 40 ounces of honey (about 1.13 kilograms) into a stand mixer, ensuring it’s at room temperature for easier blending.

2-Whip on high speed for 20 to 25 minutes until the honey turns creamy and fluffy this is where the magic happens.

3-Add optional ingredients like a pinch of cinnamon and 1 teaspoon of pure vanilla extract while whipping to enhance the flavor.

4-Once creamy, transfer the honey into airtight containers for storage, either at room temperature or in the fridge for a thicker feel.

5-If refrigerated, it might crystallize, but you can easily fix that by warming it back to room temperature.

6-For the full recipe, combine raw honey and cream of tartar in a bowl, then whip on medium speed for 5-7 minutes.

7-Gradually add lemon juice while mixing, and continue whipping for another 2-3 minutes until everything is light and airy.
