Instructions

1-Preheat and Prep: First, preheat your oven to 350Β°F (175Β°C) and line an 11Γ—7-inch baking dish with parchment paper. Dice the onion finely and chop the bacon, then heat the butter in a frying pan over medium heat. Cook the bacon and onion until the onion softens and the bacon turns golden, then remove from heat and let it cool.

2-Mix and Bake: Grate the zucchini into a colander, sprinkle with salt, and let it sit to draw out moisture. In a large bowl, mix together the bacon, onion, eggs, cheese, flour, and olive oil. Squeeze out the excess moisture from the zucchini thoroughly, then add it to the bowl along with salt and pepper to taste. Stir everything well and pour the mixture into the prepared baking dish.
